Chava Orozco
Chava Orozco is a Mexican chef with a passion for seafood and Pacific cuisine. Originally from Guamúchil, Sinaloa, and raised in Huatulco, Oaxaca, he developed a deep bond with the sea and its ingredients from an early age. With more than a decade of experience in gastronomy, he launched his own concept, Mi Compa Chava, during the pandemic. What started as a dark kitchen quickly became one of the most acclaimed seafood restaurants in Mexico City, standing out for its freshness, authenticity and relaxed ambiance reminiscent of traditional seafood carts.
Today, Chava Orozco is a reference in the Mexican gastronomic scene, recognized for his ability to transform fresh ingredients from the sea into dishes full of flavor and tradition. His cuisine is a tribute to responsible fishing and coastal recipes, fusing classic techniques with an innovative touch. Day 1 - Welcome to Magdalena Bay Ocean Camp
- Meeting in La Paz and transfer to the camp.
- Baja-style welcome meal to start the trip with local flavor.
- Free afternoon to settle in, walk along the beach, and connect with the landscape.
- Opening dinner with Chava Orozco: talk about seafood cuisine, coastal culture, and the spirit of whale safaris.
- Bonfire under the stars to break the ice and present the itinerary.

Day 2 - First Ocean Safari & Seafood Cooking Class
- Light breakfast at the camp.
- Departure for gray whale safari at the mouth of the bay, exploring mangroves and marine life.
- Demonstrative fishing activity at sea.
- Ceviche in dunes prepared by Chava with fresh produce of the day.
- Return to camp, free time to rest.
- Dinner for Chava and bonfire night

Day 3 - Flavors of the ocean
- Sunrise with breakfast.
- Demonstrative collection of clams in front of the camp.
- Second whale ocean safari, with a focus on responsible observation.
- Visit to an oyster farm and tasting straight from the sea.

- Appetizer and special dinner guided by Chava, grilled cuisine and local products.
